Last Week of Asheville Marathon Training

Did anyone do RnR New Orleans this weekend?  I did that marathon a few years ago and it was pretty fun!  Check out my recap here.  

This week was do-or-die for me, given that my longest run in this training cycle was 11.4 miles until this week.  Yikes!!!!  I usually like to get to 17 or 18 miles, if not 20.  Last week I stepped it up with three Orangetheory sessions and two longer runs, and this week I wanted to keep the momentum and finish this training cycle strong.  Oh, and do a true long run.  Here’s how I did…

How to Roast Vegetables: The Ultimate, Versatile Guide

When I was recently home for a fake, post-holiday Thanksgiving meal, I was shocked at the degree to which my vegetable-loving mom does not know how to cook vegetables.  I am assuming this is a common problem, and one that probably prevents a lot of people from eating the magnitude of veggies they’d like to eat (or should be eating).  I am working from home today and multi-tasking, and I had about a thousand pounds of vegetables in the fridge from my farm share.  So I’m roasting.  This is hands-down the #1 way to cook vegetables.  And once you know the general principles, it’s pretty foolproof.  The only veggies I prefer sauteed instead of roasted are greens like collards and spinach.  Everything else is getting thrown in the oven.  So here’s how to do it…

MSB Marathon T-Minus 6 Weeks: Thanksgiving!

Is the Mississippi Blues Marathon in only 6 weeks?! Time flies when you’re eating pumpkin cheesecake… or something like that.

Goals for This Past Week:

  • Run my Turkey Trot as close to 7 min/mile pace as possible
  • Do some kind of activity (even if just walking) while out of town for Thanksgiving
  • Stop myself from eating so much mashed potatoes/pumpkin cheesecake/carbs/yummy vegetarian sides that I feel sick
  • Squeeze in an easier 10 miler
