Last Week of Asheville Marathon Training

View from Sunday’s long run

Did anyone do RnR New Orleans this weekend?  I did that marathon a few years ago and it was pretty fun!  Check out my recap here.

This week was do-or-die for me, given that my longest run in this training cycle was 11.4 miles until this week.  Yikes!!!!  I usually like to get to 17 or 18 miles, if not 20.  Last week I stepped it up with three Orangetheory sessions and two longer runs, and this week I wanted to keep the momentum and finish this training cycle strong.  Oh, and do a true long run.  Here’s how I did…

Asheville Marathon Training — T-Minus Three Weeks

Yikes… How did that happen?… Now only three weeks until the Asheville Marathon??? Maybe that honeymoon break was a bad idea, especially given my goals for this race?  Well I had my wakeup this week and jumped back into it with both feet…

How to Roast Vegetables: The Ultimate, Versatile Guide

IMG_8648

When I was recently home for a fake, post-holiday Thanksgiving meal, I was shocked at the degree to which my vegetable-loving mom does not know how to cook vegetables.  I am assuming this is a common problem, and one that probably prevents a lot of people from eating the magnitude of veggies they’d like to eat (or should be eating).  I am working from home today and multi-tasking, and I had about a thousand pounds of vegetables in the fridge from my farm share.  So I’m roasting.  This is hands-down the #1 way to cook vegetables.  And once you know the general principles, it’s pretty foolproof.  The only veggies I prefer sauteed instead of roasted are greens like collards and spinach.  Everything else is getting thrown in the oven.  So here’s how to do it…

MSB Marathon T Minus 5 Weeks: The Big 3-0

IMG_8605

I turned 30 this week!  And that’s about all I accomplished.  It was a busy week at work, plus there was RAIN!  And coldness!  And family obligations!  I could make a million excuses, but whatever.  Back at it next week.

Here’s the summary…

MSB Marathon T-Minus 6 Weeks: Thanksgiving!

Is the Mississippi Blues Marathon in only 6 weeks?! Time flies when you’re eating pumpkin cheesecake… or something like that.

Goals for This Past Week:

  • Run my Turkey Trot as close to 7 min/mile pace as possible
  • Do some kind of activity (even if just walking) while out of town for Thanksgiving
  • Stop myself from eating so much mashed potatoes/pumpkin cheesecake/carbs/yummy vegetarian sides that I feel sick
  • Squeeze in an easier 10 miler

How did I do?

Things for Which I am Thankful, Plus Turkey Trot Results!

IMG_8441

Turkey trot results are at the bottom, but first, a list of things for which I am thankful on this Thanksgiving.

In no particular order:

  • Begin with the obvious–running, because it is been incredibly rewarding and therapeutic for me the past 10 years, through many ups and downs.  It has helped me clear my mind, battle my insecurities, improve my health, alleviate my anxiety, have fun, discover new places, meet amazing people, be a leader, learn humility, push my limits beyond what I could have imagined, feel like a part of something bigger… the list goes on…

Now that I’m all emotional…

Favorite Vegetarian Thanksgiving Dishes

IMG_8402So, as may or may not be apparent from my posts and the title of this blog, I am a vegetarian.  It all  began when I was about seven years old and my mom explained to me that beef = cow and pork = pig (“Like Babe?!”)  I continued eating chicken and turkey  for another five or so years before deciding that doing so was morally inconsistent.  The hardest thing for me to give up was my grandmother’s stuffing at Thanksgiving.  She makes it from scratch and stuffs it in the bird, and it is incredibly moist and delicious, or so I remember from 17 years ago when I last had it…

Even though my grandmother’s stuffing is “off the table” for me, I still LOVE Thanksgiving–the concept of having a holiday devoted to being grateful, and the way it welcomes the Christmas season, and the food.  So I thought I would share some of my favorite vegetarian dishes for Thanksgiving, in case anyone out there is looking for ideas.

My Name is Athlettuce. And I’m Addicted to Smoothies.

My name is Athlettuce.  And I’m addicted to smoothies.

I’ve had a smoothie almost every morning for at least six months, and I’m showing no signs of stopping.  I have one on days I run, on days I lift, on days I sleep in.   They make me feel so, so good, and like I’m starting my day on the right foot.  They are also portable–I can tuck them into the side pocket of my backpack and drink once I get to work or after Orangetheory.  I can drink while walking the dog.  Or I can enjoy at home on the couch.  They are easy to digest, so I don’t need to wait long after drinking one to work out, but they are also refreshing and protein-packed to help with recovery.

I should note that I’m not like those creative folks on Instagram coming up with a variety of colorful smoothie bowls with lines of seeds and nuts and coconut strips on top.  No, I’m more of a practical smoothiewoman.
